I finally got it right. After years of mixing a dozen versions, my family agrees this came out the best! And it only takes 15 minutes to prepare...
Ropa Vieja

1.5-2 lb flank steak

1 onion, sliced

1 green pepper, sliced

2-3 cloves garlic, crushed and chopped

2 tsp cumin

2 tsp oregano

1 28 oz can crushed tomatoes

1 cup beef broth

½ cup red wine
Salt and pepper both sides of steak. Heat oil in pan. Pan
fry flank steak for 5-7 minutes on both sides. While steak is cooking, slice
onion and pepper (with mandolin if possible). Remove steak from pan and place
in crock pot. Add garlic, peppers, onions, tomatoes, broth and wine. Season
with cumin and oregano (more for stronger flavor and crushed red peppers for
heat). Cover and simmer on high 4-5 hours. Remove meat and pull apart. Place
steak back in pot and heat on low for at least another hour. Serve with white
rice (and black beans and plantains if desired for a proper Cuban meal).
